The Institute for Sustainable Hospitality & Enterprise
From our beginnings 70 years ago as the dining hall of a small college in Standish, Maine, the Sebago Center’s Institute for Sustainable Hospitality and Enterprise is the largest food services provider in the Lakes region. Serving 9,000 meals per week during seasonal peaks, we manage three retail operations and an event catering enterprise. We are a leader in the farm-to-institution movement, sourcing 30 percent of our food within 300 miles. Focused on regional sustainability, we work within Maine’s tourism and hospitality ecosystem to continuously measure and improve the social, economic, and ecological impact of the regional hospitality industry.
The purpose of the Institute for Sustainable Hospitality and Enterprise is to leverage our core food services competencies to provide education and workforce development to Maine’s hospitality and related service industries. The Institute also works to identify ongoing challenges and new issues affecting sustainability in the hospitality industry and to develop, implement, and share solutions throughout the community. Our staff and partners include farmers, food producers, culinary artists and entrepreneurs, composting companies, biofuel manufacturers, and workforce suppliers. Working together, we seek to bring integral ecology to tourism and hospitality.

Pearson’s Cafe is the cafeteria at the Sebago Center/Saint Joseph’s College, managed in partnership with the Institute for Local Food Systems Innovation. With over 9,000 meals served weekly, we leverage our large audience to ensure that the farms and vendors we work with locally are featured at the forefront of our menu.
Baggot Street Cafe
If you’re a visitor to campus looking for a delicious scratch-made meal to go, or to sit down and enjoy your food with great company, Baggot Street is the place to go. With a full coffee program and a rotating menu of sandwiches, pizzas, salads, soups, and seasonal hot entrees, you will taste the freshness and care that goes into designing our menu with our local partners in mind.
The ways to enjoy the Stone Barn are abundant. Whether you’re dropping in for a community gathering, enjoying a beer in our courtyard during our Sunday evening concerts, or joining us for a festive Stone Barn Dinner, you are sure to be eating and drinking a thoughtful selection of local goods chosen by our chefs to reflect our friends and partners making amazing local products.
